Ingredients

  • 300 g (organic) salmon fillet
  • 1 clove of garlic
  • ½ Chinese cabbage, in thin strips
  • 1 red pepper, in thin strips
  • 2 spring onions, finely sliced
  • 1 mandarin, in segments
  • a few fresh coriander leaves

Marinade

  • ½ tbsp Fiordifrutta Mandarins and Turmeric
  • 1 tbsp groundnut or sesame oil
  • 1 tbsp rice vinegar
  • 2 tbsp soy sauce
  • ½ tbsp sesame seeds

Method

Mix the marinade ingredients. Place the salmon in an ovenproof dish and pour over the marinade. Leave to marinate briefly.

Preheat the oven grill, remove the salmon from the marinade and grill for 7-10 minutes, or until nicely caramelised on top. The salmon can still be slightly translucent inside.

Fry the garlic in groundnut or sesame oil. Add the strips of Chinese cabbage and pepper and stir-fry until al dente. Season with black pepper and a pinch of salt. Briefly roast or grill the mandarin segments on each side.

Serve the salmon with the stir-fried vegetables and grilled mandarin, and finish with spring onion and coriander. Spoon over a little extra marinade.
